Arugula salad with strawberries, walnuts and avocado
Ingredients:
- 4 handfuls of fresh arugula, washed and spinned dry
- 1/2 ripe avocado, diced
- 4-5 large, ripe strawberries, sliced
- 1/4 cup walnuts
- 1 Tablespoon lemon juice
- 2 Tablespoons EVOO
- 1 teaspoon agave nectar
- Salt & Pepper to taste
Instructions:
- Toast the walnuts in a toaster oven or oven until light brown. Let cool and finely chop.
- Place the arugula on salad plates
- Cover with the strawberries, avocado and walnuts
- Mix the EVOO, lemon juice, agave and salt & pepper (adjust as needed to taste)
- Pour the dressing over the salad
