Ingredients:
- 1 cup organic coconut milk
- 2 cups coconut drink (such Coconut Dream)
- 1 Tablespoon vanilla extract
- 2/3 cup chia seeds
- 1/3 cup maple syrup
Instructions:
- Warm the coconut milk for 1 minute in the microwave or stove top
- Add chia seeds and let sit for 30 minutes
- Add the rest of the ingredients
- Let the pudding sit out for 2 hours
- Refrigerate for 4 hours for the best taste
- Eat within 24 hours
Enjoy topped with berries.
