Chia seed & coconut milk pudding

Ingredients:

  • 1 cup organic coconut milk
  • 2 cups coconut drink (such Coconut Dream)
  • 1 Tablespoon vanilla extract
  • 2/3 cup chia seeds
  • 1/3 cup maple syrup

Instructions:

  • Warm the coconut milk for 1 minute in the microwave or stove top
  • Add chia seeds and let sit for 30 minutes
  • Add the rest of the ingredients
  • Let the pudding sit out for 2 hours
  • Refrigerate for 4 hours for the best taste
  • Eat within 24 hours

Enjoy topped with berries.
